This recipe was born out of laziness, that's right laziness. Sometimes life is just too hectic and a girl's got things to do and she can't be bothered to spend time slaving in the kitchen...AM I RIGHT?!
On that note, here is a quick but saucy sausage and Mediterranean vegetable medley that I've come to love making on this busy days. Hope you enjoy :)

Servings: 3-4 depending on how hungry you are ;)

+10" skillet
1Litre pot
Knife
Spatula
Ingredients <see photo below>
1 can of chopped tomatoes 400gm
1 frozen bag of Mediterranean Vegetables (can be substituted with other grilled/frozen vegetables - and don't forget to throw in leftover vegetables)
1 pack pork sausages
small shaped pasta approx. 250gm - here I used gluten-free fusilli
Let's start cooking!
Step 1: Add water to pot (a little more than halfway) add salt and let come to a boil
Step 2: Cut sausages into 1" inch rounds - no need to peel off the outer casing
Step 3: Skillet on high heat, add about 1 TBSP of olive oil to skillet
Step 4: Once skillet is hot, add chopped sausages and let cook, stirring occasionally until brown, turn down heat to medium
Step 5: Add more than half of the Mediterranean mix (500-600gm) to the skillet with sausages and stir until combined and cooked through (HOT!)
Step 6: Is the water boiling yet? If so, add the pasta and stir, letting cook until al dente (read the back of the box for timing!) Once cooked, strain pasta and rinse under hot water so it doesn't clump together. Set aside.
Step 7: Once some the liquid has evaporated from the skillet (frozen veg will leave some water) add one can of chopped tomatoes to the sausage mix and stir until combined
Step 8: Add 2 pinches of flaked sea salt to sausage mix - should be pretty saucy by now
Step 9: Once the tomato sauce has reduced a little bit in the sausage mix you can add the cooked pasta and stir to combine all ingredients
Step 10: Turn off all heat elements
Plate and enjoy!
