Shakshuka with Crusty Bread

If I could only have one meal a day, I'd pick breakfast every day of the week and twice on Sunday. I tend to lean on the savoury side and one of my quick, but delicious, breakfast meals on the weekends is a shakshuka with some fresh bread. Shakshuka is a middle-eastern dish which uses tomatoes, onions and spices as the base with poached eggs, the perfect combination for a hearty brunch meal.

Equipment Needed <see photo below>
10" skillet with a lid
Garlic Press
Can Opener - if required

Ingredients <see photo below>
1-2 eggs
Crusty bread like sourdough
1 glove garlic
1 can of crushed tomatoes
pinch of crushed chili flakes
parmesan cheese (not pictured) - optional

Let's start cooking!
Step 1: Peel garlic
Step 2: Put skillet on stove top and turn on medium heat
Step 3: Add a tablespoon of olive oil
Step 4: Using garlic press, mince garlic into heated olive oil, add pinch of crushed chili flakes
Step 5: Once garlic is lightly brown remove skillet from heat
Step 6: Carefully add can of crushed tomatoes to skillet - it may splatter so add slowly
Step 7: Stir well
Step 8: Create a pocket in the middle of the skillet and crack an egg or two (as desired)

Step 9: Cover and reduce heat to low for about 2 minutes

Step 10: Uncover and poke the egg, if the white are set you can turn heat off and plate

Step 11: Top with grated parmesan cheese and/or fresh basil leaves
Step 12: Don't forget to dunk your bread into the yokes
