I love shallots and I love eggs, combine the two and its a pretty perfect breakfast option, something that I whip up pretty regularly for myself. I didn't know quite how good they were to others, until I found myself in Tuscany and made breakfast for the crew...for the next three days! :) So let's grab some eggs and get cracking!

9"-10" Skillet
Knife
Fork
Cup - for whisking eggs
Spatula

Ingredients <see photo below>
extra virgin olive oil (EVOO) or non-salted butter
1 medium/large shallot
2 large eggs
sea salt flakes

Let's start cooking!
Step 1: Peel, wash and slice shallots diagonally so you get little rings
Step 2: Pre-heat pan with olive oil or butter over medium heat
Step 3: Add shallots to hot pan and stir for about 2 minutes until soft

Step 4: Crack two eggs in a cup and whisk using a fork to incorporate yolks together

Step 5: Pour eggs into pan with shallots and stir, incorporating eggs into the shallots
Step 6: Turn off heat, eggs should be as runny as desired, top with pinch of sea salt

Step 7: Great with some crusty bread toast or on its own with some cherry tomatoes on the side!
